Roasted Grapes and Herbes de Provence Cheese Stuffed Sweet Potatoes

Instructions
  1. Pre-heat the oven to 400F
  2. Cut the sweet potatoes lengthwise and place cut side down on a baking tray
  3. Toss the grapes in the olive oil, salt and pepper
  4. Bake grapes for 10 minutes or until they begin to brown and shrink
  5. Bake sweet potatoes for 40 minutes or until tender through
  6. Carefully flip the sweet potato half cut side up on a plate. Use a spoon to mash down the sweet potato a little to make room for the cheese.
  7. Fill with a couple of tablespoons of cashew cheese. Top with roasted grapes
  8. Drizzle vegan honey over the grapes to finish
