Vegan Cheese Crackers With Fauxmage Rooster Spice Cheese (Gluten-Free)

I used to love those store-bought cheese crackers. You know you did, too! They were a guilty treat that I only bought once or twice a year, but I could eat the entire box in few days. Dangerous.

Sadly, not only do they contain scary dairy, they are full of other unhealthy ingredients that the healthier version of me wants to avoid. Making your own at home is actually really easy, and of course much better for you. This recipe is adapted from the Minimalist Baker, whom I adore. Here we use our cheese in place of the vegan butter, which makes it even healthier! Who knew those dastardly little orange crackers could actually become a healthy snack?

Perfect for those cool summer nights that turn into fall, this recipe marries sweet and savory to perfection. Cheese Ball With Fresh Rosemary, Cranberries, and Fauxmage Cheese

This recipe is incredibly simple and best of all, you can use any flavor of Fauxmage cheese you have on hand. We used Sundried Tomato & Basil for that pretty red-and-green Christmas look, but you can really use any that you have on hand. Here are some tasty combinations that we love:

Herbes de Provence rolled in chopped green pistachios (also very festive), with cranberries or dried apricots.

Sundried Tomato & Basil rolled in sliced toasted almonds.

Olive and Rosemary rolled in capers and oil-packed sundried tomatoes.

Harissa rolled in preserved lemon and roasted hazelnuts

Rooster Spice rolled in chopped Mama Lil’s peppers

It is really hard to go wrong. Take one of these to your next party and make your guests very happy!

Savory Apple & Rosemary Galette with Rooster Spice Cheese

fauxmage-galette-apple-pieOne of my favorite fall treats is apple pie. When I was little my mom would occasionally grate cheddar cheese right into the crust — it smelled amazing while it was baking! Fruit and cheese is one of the best sweet/savory combos on the planet, am I right? This galette was inspired by those lazy fall days when leaves were swirling outside and we were curled up with the kitties inside, waiting for homemade pie to come warm from the oven. In this version we bake Rooster Spice cheese right into the crust for a sophisticated take on mom’s apple pie. This galette is versatile too — serve with a huge green salad for lunch, cut into squares for guests at a soiree, and of course it makes for a unique dessert. Hope you enjoy!

Happy Thanksgiving 2015!

This year we are thankful for so many things! We are thankful for the fact that veganism is going mainstream and that more folks are moving toward a plant-based lifestyle. We are thankful for all of our friends and family, who have been so supportive of our new endeavor to make cheese for a living. We are thankful that we have been given a chance to see this little dream of ours become a reality, and we are especially thankful for the grocers who have taken a chance on our new product and to all of our customers out there who have had so many kind things to say about Fauxmage. Our hearts have been truly filled! We wish you all a peaceful day filled with family and friends, good food and good drink, and compassion for all living creatures.
